We have been talking a lot about the importance of prebiotics for gut health. While supplements can help, it is always best to get prebiotics through your diet when possible.
This leek and bean soup is packed with prebiotic-rich ingredients to feed the good bacteria in your gut, helping them thrive and keep your digestive system happy.
What You Need
- 2 teaspoons olive oil
- 2 cloves garlic, chopped
- 4 leek bulbs, chopped (white and light green parts)
- 2 (16-ounce) cans chicken or vegetable broth
- 2 bay leaves
- 1½ teaspoons ground cumin
- ½ teaspoon dried rosemary
- 1 (16-ounce) can cannellini beans, rinsed and drained
- 3 cups chopped chicory
- Salt and pepper, to taste
What To Do
- Sauté the aromatics
- Heat the olive oil in a large stock pot over medium heat.
- Add the chopped leeks and garlic and cook, stirring occasionally, until softened about 4 minutes.
- Build the broth
- Stir in the broth, bay leaves, cumin, and rosemary.
- Bring the mixture to a boil.
- Add beans and greens
- Add the cannellini beans and chopped chicory.
- Reduce heat to medium and simmer uncovered for about 15 minutes, or until the chicory is tender.
- Blend for creaminess
- Remove the bay leaves.
- Transfer about 2 cups of the soup to a blender and puree until smooth.
- Return the pureed soup to the pot to thicken the texture.
- Season and serve
- Season with salt and pepper to taste.
- Serve warm and enjoy a gut-friendly, comforting meal that supports your digestive health.
